Description

The Task Force Executive Chef is a dynamic hospitality leader who thrives in fast-paced environments and is passionate about culinary excellence, innovation, and mentorship. Reporting to the Head of F&B, this role provides leadership, stability, and operational continuity across Gravity Haus locations during times of transition, high demand, or leadership vacancies.\

As a roving executive, the Task Force Exec Chef supports and uplifts property culinary teams — stepping in to lead daily kitchen operations, guide menu execution, manage budgets, and inspire excellence in service and guest satisfaction. This role ensures that each Gravity Haus kitchen continues to deliver elevated, locally inspired, and sustainably minded cuisine aligned with our brand’s mission and values.

What You’Ll Do

  • Lead and support property culinary teams across multiple locations, ensuring continuity and adherence to Gravity Haus culinary standards.
  • Execute daily kitchen operations — including menu planning, purchasing, vendor management, staffing, and training.
  • Cross-train, mentor, and empower teams to elevate their technical skills, efficiency, and collaboration.
  • Implement and maintain Gravity Haus culinary systems to ensure operational consistency across properties.
  • Oversee food safety, sanitation, and quality assurance — including temperature logs, storage rotation, and compliance with health codes.
  • Manage ordering, receiving, and inventory to control food and labor costs within budget parameters.
  • Analyze P&L statements and operational reports to make data-driven decisions and drive profitability.
  • Partner with the Corporate Executive Chef and property leaders (GM, F&B Director, etc.) to refine and execute seasonal and local menus.
  • Ensure all recipes, training materials, and menu documentation remain current and accurately implemented.
  • Foster a positive, collaborative, and inclusive kitchen culture where team members feel valued and motivated.
  • Represent Gravity Haus as a brand ambassador — exemplifying our values, passion for the outdoors, and commitment to community.

Who You Are

  • Minimum 6 years of progressive culinary experience, including supervisory or management roles in resort, hotel, or upscale restaurant settings.
  • Proven success as an Executive Chef or Senior Sous Chef managing high-volume operations.
  • Culinary degree or equivalent professional experience required.
  • Strong understanding of menu engineering, food costing, and budgeting.
  • Familiarity with Google Suite, POS/inventory and other industry specific technology platforms preferred.
  • A hands-on culinary leader who can confidently run all stations in a high-volume kitchen with technical precision and creativity.
  • Tech-savvy and adaptable, able to learn and leverage culinary, operations, and reporting platforms.
  • A motivator and mentor who leads by example — developing teams through coaching, consistency, and accountability.
  • Calm, composed, and solutions-oriented under pressure; able to balance strategy with execution in variable environments.
  • Fluent in English (Spanish a plus) with strong communication skills across all levels of the organization.
  • Highly organized with a deep understanding of inventory, cost management, and labor controls to meet financial goals.
  • Committed to excellence, sustainability, personal growth, and the Gravity Haus lifestyle.

Physical Requirements

  • Ability to stand for extended periods and work up to 10-hour shifts.
  • Must be able to lift 50 lbs and work in fast-paced kitchen environments.
  • Willingness and ability to travel over 50% of the time (air and ground travel required).
