Job Description

Job Purpose:

The Health, Hygiene and Sustainability Manager is responsible for managing end-to-end Health, Hygiene &  Sustainability function of the property by ensuring that the hotel maintains high standards of sanitation and hygiene in all food handling areas. This includes but not limited to verifying compliances with food safety regulations, providing training on proper food handling practices, identifying, and addressing potential risks, and offering technical advice on Health & Hygiene related matters.

Main Responsibilities:

Sustainability:

  • Develops and implements strategies to minimize an organization's environmental impact while aligning with business goals. 
  • Key responsibilities include analyzing operational efficiency, ensuring regulatory compliance, and leading cross-functional teams to integrate sustainable practices across departments like engineering, finance, and supply chain as well as handle sustainability reporting and communication. 

Health, Hygiene And Sanitation:

  • Vendor Compliance & Inspections: Conduct regular vendor inspections in partnership with the sourcing team and culinary leadership.
  • HACCP Compliance: Manage and support the ongoing implementation and adherence to a food safety management system designed to identify, evaluate, and control potential hazards (biological, chemical, and physical) in a food production process.
  • FSMS Compliance: Manage and support the ongoing implementation of the interrelated processes and best practices that organizations use to direct and control how food quality and safety management policies are implemented, and food safety risks are managed.
  • Handles complaints or enquiries from customers and local food strategy and requirements of Bangkok Metropolitan Administration (BMA) Health & Food Sanitation Department on food sanitation, health and hygiene matters.
  • Brand Standard Compliance: Verifies compliance with Brand Standard Audit (BSA) requirements of throughout the hotel operations.
  • Maintain standards/requirements under ISO 20121 Event Sustainability Management Systems
  • Advises and monitors food handlers on the proper good handling practices and verifies their observance.
  • Identifies key areas of risk in various food operations and takes preemptive remedial action.
  • Verifies compliance with food and hygiene regulations, licensing conditions and codes of practice relating to food operations.
  • Provides technical advice on product labeling issues for fulfilling government requirements.
  • Provides core in-house food hygiene training and follow up sessions for all good handlers, (e.g. new hires, interns and appointed outsourced agents).
  • Conducts and records daily kitchen inspections on the personal, environmental and food hygiene conditions and provides corrective action plans, as deemed necessary.
  • Conducts regular vendor inspections in partnership with sourcing team and culinary leadership.
  • Conducts regular internal inspections with culinary leadership and kitchen cleaning team members.
  • Conducts regular inspections on the kitchen of kitchen equipment and verifies defects and non-conformities are remedied by the appropriate parties.
  • Coordinates cleaning/sanitation program in all F&B areas (e.g., General clean, deep clean by appointed specialists), identifying trends and making recommendation for continuous improvements.
  • Establishes and maintains open, collaborative relationships with employees.
  • Liaises with appointed/approved pest control company for any pest issues and monitors pest control performance.
  • Maintains and makes continuous improvements to health and hygiene standards.
  • Regularly reviews and refreshes the health and hygiene food safety standards of all food handlers at the hotel.
  • Maintains accurate documentation on all health, hygiene, and food safety standards throughout the hotel.
  • Other duties/projects as assigned by the hotel leadership team.

Qualifications

  • A Bachelor's degree in a related field such as food science, microbiology, public health, or food safety.
  • Minimum 2 years work experience in a similar role in a hotel/resort or large restaurant complex or a service oriented industry, preferable from a 5-star establishment.
  • Fluent in English, both verbal and written.
  • Ability to deal with related Thai authorities and concerned Thai government agencies as deemed necessary.
