Job Summary
The Senior Manager, Food & Beverage (F&B) – US + Canada leads the development and execution of Restaurant & Bar (R&B) programs that align with Marriott’s brand pillars and deliver a sustainable competitive advantage. This role drives progress on multiple complex projects, implementing the F&B platform strategy for premium brands within the US & Canada, designing and executing renovation projects, and providing consultation and support for Restaurant and Bar operations. This Senior Manager maintains knowledge of brand standards, identifies operational inconsistencies, and enhances processes to improve F&B execution. This role maintains concept documentation and advises on design to ensure operational efficiency and market relevance, manages discipline initiatives including training and property visits which requires collaboration with hotel and regional leadership, support for program implementation, and acting as a point of contact for problem resolution. This Senior Manager measures results and provides technical expertise to guide properties in achieving balanced scorecard goals.
Candidate Profile
Education And Experience
Required
- 4-year Bachelor's degree from an accredited university in Business Administration, Hotel and Restaurant Management, Culinary Science, or related major OR an equivalent combination of education and experience from which comparable skills and knowledge can be acquired.
- 5+ years experience as a leader in Restaurant and Bar Operations; Strong knowledge and expertise with all aspects of Restaurant and Bar Operations
Preferred
- Progressively responsible work experience in Food & Beverage/Hotels leading the Restaurant & Bar Operations including Project Management Experience
- Prior experience in regional, corporate, or multi-unit restaurant and bar operations
- Proficiency in Microsoft PowerPoint and/or InDesign
Core Work Activities
- Engage industry and internal resources to develop concepts and programs that are aligned with brand pillars and appropriately designed to deliver sustainable competitive advantage
- Accountable for driving progress on multiple, complex projects which may originate from Discipline, Brand and Continent, balancing focus, capacity and resourcing to deliver against expectations. Provide regular updates to stakeholders to ensure projects are progressing as intended.
- Implement and execute the Food & Beverage platform strategy for premium brands within US & Canada in accordance with the timelines and mechanisms to roll out, support, and continuously improve F&B operations and programs.
- Manage discipline initiatives as appropriate including training, property visits, and ad hoc requests.
- Maintain knowledge of brand and discipline standards, processes and regulations; identify opportunities and operational inconsistencies; enhance and develop standardized processes to improve Food & Beverage execution across US & Canada.
- Provide consultation and support to F&B disciplines with a focus on Restaurant and Bar operations, ensuring organizational alignment to the US & Canada Continent, brand, discipline, and business priorities.
- Maintain concept documentation including training materials, systems standards, quality assurance, and internal resources (ex. Marriott Global Source) for assigned programs.
- Research historical, social, and physical context of our existing and future F&B outlets to allow for storytelling opportunities.
- Advise and approve front-of-the house and heart-of-the house designs to create Restaurants & Bars that are operationally efficient, on brand strategy, and market relevant.
- Design, develop, and execute assigned renovation projects and new F&B initiatives in US & Canada; develop and maintain F&B related collateral in conjunction with brand marketing.
- Measure results, provide technical and business expertise and insights on product development to guide properties in achieving optimum performance in the balanced scorecard goals for US & Canada F&B across brands.
- Influence and collaborate with hotel and regional leadership teams related to the repositioning of F&B as needed. Act as a liaison and resource for owners, General Managers, and Global Design by participating in project kick-off and milestone meetings as required.
- Provide support to property, regional, and continent stakeholders in relation to program implementation across managed and franchised hotels; manage property F&B related exception requests in partnership with Global Operations, Brand and Owner Franchise Services.
- Serve as point of contact for problem resolution as appropriate for US & Canada; provide expertise, support and open communication to the hotel openings team and Food & Beverage trainers.
- Involvement in Restaurants and Bars (R+B) Council and Masters of the Craft
- Ability to travel up to 25% of the time
