Position Summary

【Purpose Of Role】

Assist Stewarding Manager and supervise Stewarding department daily operation. 

Exercising effective and environmental friendly procedures.  Maintain hygiene, sanitation, cleanliness and safety standards in kitchens, dishwashing areas, garbage collection / storage, and any other production areas.

Assist Stewarding Manager, ensure hygiene standards are met and exceeded where possible, in all Beverage & Food venues and kitchens.  

Maintain service and kitchen equipment in good condition and working order.

Assist Stewarding Manager in the supervision and coordination of all Stewarding activities and Talent.

【Cast Key Responsibilities】

Beverage and Food Division

1.Organize mise en place & food preparation.

2.Assist with supervising the preparation of equipment for kitchen use.

3.Assist with supervising the assembly and preparation of menu items ingredients.

4.Receive and store goods.

5.Manage the receiving and storage of kitchen goods.

6.Maintain superior conditions of all equipment in the department.  Ensure that silverware is polished / burnished on a regular basis.

7.Clean and maintain equipment and premises

8.Supervise the cleaning and storage of kitchen and venue equipment.

  • Supervise premise cleaning.
  • Supervise waste removal.
  • Supervise kitchen linen handling.

9.Keep control of all china, glassware, flatware and holloware, and conduct inventory control.

10.Maintain hygienic standards and practices.

  • Ensure that all Talent carry out tasks according to HID.
  • Maintain a hygienic kitchen.
  • Clean kitchen and equipment.
  • Maintain personal hygiene.

【職位宗旨】

協助餐務經理及監督餐務部的每日運作。

依照程序實行有效及環保的環境清潔維護。依照衛生及安全標準維護清潔廚房、洗碗區、垃圾集中 / 儲存及其他與餐務相關區域。

協助餐務經理,確保所有與餐飲區域及廚房環境符合(並盡可能超越)衛生標準。

維持廚房設備處於良好狀態及操作順利。

協助餐務經理監督及協調人才及部門服務運作。

【主要負責事項】

餐飲部

1.協助餐前服務準備工作及食物擺盤所需各項支援。

2.協助編制與監督廚房用設備。

3.協助支援菜單各項所需盛裝器皿補給。

4.接收及存放廚房倉庫食材。

5.維護部門內所有設備,保持使用狀況為最好的狀態;確保銀器定期保養。

6.清潔和維護設備和工作場所。

7.負責監督廚房和餐廳的餐具清洗及設備存儲

  • 負責監督工作環境清潔。
  • 負責監督垃圾分類清運處理作業。
  • 負責監督廚房布巾處理。

8.控管所有瓷器、玻璃器皿,餐具、凹形器皿,並定期進行盤點及破損控管

9.依照衛生標準及工作流程

  • 確保所有人才依照標準作業流程工作。
  • 保持廚房環境衛生及清潔。
  • 維護廚房及設備的清潔。
  • 確保個人衛生合乎要求。
