Purpose of the role

Driving profitability in food and beverage using the tools already in the business with a focus on menu costing, stock control, loss prevention, supplier consolidation and Continuous Improvement framework

Your day to day

  • Uses financial analysis, data trends and market information to anticipate needs, identifies operating/financial issues, and recommends actions to maximize financial return.
  • Ensure through the menu cycle that all items are costed and entered onto the relevant system
  • Advise where remedial action is required following the data from the Loss Prevention system
  • Standardise and maintain the beverage stock taking policy
  • Using the beverage stock system to improve profitability through the analysis of any Deficits and surplus, whilst ensuring pricing is correct
  • Working with the UK Procurement team on consolidating SKUs used in the hotels for Food and Beverage
  • Using the sales data tools to drive up selling opportunities
  • Working in liaison with BSC and other stakeholders to ensures that there is a process in place that will allocate costs out to each outlet based on the agreed principles
  • Work with external consultants where appropriate and required to drive and deliver financial returns on projects
  • Using the Continuous Improvement framework work to reduce the 8 Wastes in the Food and Beverage

What we need from you

Education

•            Degree education, or a relevant field of work, or an equivalent combination of education and work-related experience.

Experience

  • Data analysis and use of data to deliver continuous improvement
  • System development and delivery
  • Working with numerous stakeholders

Technical Skills and Knowledge

  • Data analytics and demonstrate the use of this to drive performance
  • Strong communication skills, both verbal and written to address all levels within the organization
  • Demonstrated ability to scope a project and develop a plan of action, ability to influence others, present convincing arguments and deal with conflicting viewpoints.
  • Ability to challenge the status quo, and have courage to ‘do the right thing’
