Mission and key tasks

  • You will contribute to the development of ready-to-use sourdough starters through the optimization and understanding of fermentation
  • You will conduct a comprehensive literature review to support the research framework
  • You will design and implement experimental plans tailored to the objectives of the study
  • You will carry out sourdough fermentation at laboratory scale under controlled conditions
  • You will characterize sourdough samples through physicochemical analyses such as HPLC and TTA
  • You will perform microbiological evaluations including microbial counting and identification
  • You will participate in sensory evaluation sessions to assess product quality and attributes
  • You will perform data processing and statistical analysis using tools such as XLSTAT

Who are we looking for ?

  • You are studying agronomy, agrifood, biotechnology, food science,...
  • You have knowledge of microbiology
  • You are fluent in French and/or English
