The Dining Services & Hospitality Manager is a hands-on leader responsible for overseeing front-of-house dining services, concessions, catering, hospitality breaks, and bar service. This role blends operational management with active participation in daily service, ensuring seamless execution of events, games, and special functions. The Dining Services & Hospitality Manager drives staff training, vendor relations, inventory and POS oversight, event setups, and food safety compliance. Working closely with the Manager, Food & Beverage and the Chef Manager (Kitchen Production & Culinary Operations), this position ensures a consistent, high-quality dining, catering, and concessions experience across the complex.
Responsibilities
Operational Leadership
- Direct day-to-day operations of concessions, catering, and hospitality services during games, events, and special functions, while ensuring smooth guest dining service
- Support the planning, production, and service of all year-round dining programs, including team meals, group dining, and hotel guest food service
- Act as the primary front-of-house liaison to back-of-house teams, ensuring alignment in food quality, timing, and service standards
- Provide leadership coverage in the kitchen when necessary to maintain workflow and service consistency
Menu & Inventory Management
- Contribute to menu development, costing, and pricing strategies for concessions, catering, and hospitality services
- Ensure food preparation, storage, presentation, and sanitation meet JRTC standards
- Monitor inventory levels, place vendor orders, and oversee receiving processes for concessions and catering
- Maintain accurate supply and equipment records to support cost-effective controls
POS System Oversight & Event Setup
- Manage daily operation and upkeep of the POS system across all F&B outlets
- Train staff on proper POS use, ensure accurate transaction processing, and reconcile shifts
- Troubleshoot POS issues and coordinate with IT or external vendors as needed
- Partner with F&B, Event Planning, and Operations teams to ensure banquet, catering, bar, and hospitality setups meet group specifications
Financial & Budgetary Oversight
- Assist with F&B budget development, including cost forecasting, revenue projections, and labor expense management
- Track and analyze sales data from concessions, dining, and hospitality outlets; recommend adjustments to menus, pricing, and inventory for profitability
- Oversee reconciliation of daily sales (cash, credit cards, tips) in compliance with company policies
Staff Development & Scheduling
- Recruit, train, and supervise part-time and seasonal food service staff assigned to dining, concessions, catering and hospitality support roles
- Provide coaching and feedback to ensure adherence to food safety, guest service, and performance standards
- Assist with staff scheduling based on business needs, events, and dining volume
Sanitation, Safety & Compliance
- Enforce compliance with local, state, and federal food safety and sanitation guidelines
- Maintain updated safety records, training certifications, and cleanliness logs
- Monitor food service equipment, ensuring preventative maintenance and reporting repair needs promptly
Interdepartmental Coordination
- Partner with internal departments to coordinate team meals, late-night dining, and hospitality functions
- Communicate staffing, scheduling, and operational updates to the Manager, Food & Beverage
- Support planning and execution of large-scale or high-profile events, ensuring consistency in food quality and service
- Incorporate guest feedback and best practices to continuously improve food and beverage operations
Other Duties
- Coordinate bar service operations, including hiring, training, scheduling, and oversight of bartenders, menu creation, product ordering, and inventory management
- Assist with the oversight of back-of-house operations as required
- Perform additional responsibilities as assigned by the Manager, Food & Beverage
Qualifications & Skills
Education & Experience
- High school diploma or equivalent required; associate’s or bachelor’s degree in Culinary Arts, Hospitality, or related field preferred
- 3–5 years of food and beverage experience, including at least 2 years in a supervisory role
- Background in concessions, catering, or institutional dining strongly preferred
Skills & Competencies
- Strong leadership, problem-solving, and organizational skills
- Proficiency in food costing, POS system management, and vendor coordination
- Ability to work under pressure in a fast-paced, customer-facing environment
- Effective verbal and written communication skills
Physical & Availability Requirements
- Must be able to stand, walk, and lift up to 50 lbs. for extended periods
- Availability to work flexible hours, including evenings, weekends, and holidays
- Ability to obtain and maintain food handler certification

The Jackie Robinson Training Complex (JRTC), operated by Major League Baseball (MLB) located in Vero Beach, Florida, serves as a year-round hub for amateur development initiatives and events designed to diversify and strengthen the talent pipelines of baseball and softball. We are the permanent home to several signature youth-focused events and programs, such as the Nike RBI World Series and the Hank Aaron Invitational, which teach players how to succeed on and off the field. The historic facility, formerly known as Dodgertown, was renamed Jackie Robinson Training Complex in honor of its trailblazing namesake.
