Position Summary:
This position is responsible for product in the smokehouses and to make sure that the smokehouse schedule is run properly.
Responsibilities:
- Ensure the smokehouses operate properly.
- Monitor controls on panels, doors, wet sock water, gaskets loading ramps, lights, horns, dampers and air intakes.
- Notify management of any smokehouse equipment related break downs or if the department is not running properly.
- Responsible for designated smokehouses as well as rotating to other smokehouses when needed.
- Dry out smokehouses, change wet socks, empty burned ashes into pit, and keep panels clean.
- Ensure the smokehouses are clean before loading, showers are working properly, and sewers are draining properly.
- Take thermometers to lab and have them calibrated.
- Ensure smoke generators work properly to include the following: inspect clean out hole and clean if necessary, put gaskets on discharge housing, ensuring that ashes drain properly, place ash pans under generators, set temperature at 725 degrees., ensure that coils work properly, ensure that smoke tubes are cleaned and in order, and install discharge housing.
- Clean smokehouses according to specifications.
- Clean scales and smoke generators when dirty.
- Keep generator full of sawdust.
- Keep bags of sawdust on pallets by each set of smokehouses.
- Keep air make up units running.
- Ensure product is properly placed in smokehouses to include product separation.
- Move 50-pound bags of sawdust from pallet to smoke generators.
- Move 1,000-pound racks from staging area to smokehouse and from smokehouse to chill.
- Perform general housekeeping duties in the department.
- Comply with all LOTO, chemical, and confined spaces rules requirements.
- Comply with all safety, food safety, GMP and SQF requirements.
- Perform all positions of job rotation as needed.
- Perform any other work as assigned by management.
- Ability and willingness to perform basic math functions (i.e.: addition, subtraction, multiplication, division).
Requirements:
- Ability and willingness to work overtime and/or weekends as needed.
- Ability and willingness to work adjusted shift times in emergency situations involving the Smokehouse area of the plant.
- Ability and willingness to obtain town motor certifications for a stand up, sit down, and high lift tow-motor/tugger.
- Ability and willingness to scan or input into the computer system, all product film, boxes, casings, clips, and ingredients for all daily product runs, including change overs.
- Ability and willingness to follow formulations on the computer and accurately record and report food safety or product information.
Physical Requirements: The successful candidate(s) must be willing and able to perform the physical requirements of the job with or without a reasonable accommodation.
- Ability and willingness to lift/lower/carry 50 pounds or greater with back and legs.
- Ability and willingness to lift 50-pound bags several times per hour.
- Ability and willingness to push/pull/lift with arms below waist/at shoulder/above shoulder level 20 pounds or greater frequently.
- Ability and willingness to move 1,000 pound racks.
- Ability and willingness to use both hands for rapid mental muscular coordination, simultaneously.
- Ability and willingness to reach high and low levels, frequently.
- Ability and willingness to flex/grip with wrist/hands frequently.
- Ability and willingness to constantly stand/stoop/walk/bend up to 10 hours.
- Ability and willingness to climb stairs.
- Ability and willingness to work in wet conditions and cold temperatures at 35 degrees.
- Ability and willingness to work in temperatures of 90 degrees to 100 degrees.
Preferred Skills:
- Machine Operator experience preferred
- Experience in a manufacturing setting preferred
- RF Scanner experience preferred
Qualifications:
- 3 months of work history with the same employer
