Are you ready to take the next big step in your culinary career? Four Seasons Hotel Toronto is looking for a Butcher and Charcutier Junior Sous Chef who shares our passion for food and cooking and is willing to learn from and contribute to our culinary team. Our Butcher and Charcutier Junior Sous Chef will be a key leader of a dynamic culinary team providing memorable culinary experiences to our guests. This position reports to the Café Boulud Executive Chef and supports both the Café Boulud/d|bar and Hotel operations.  

About The Role:

The Butcher and Charcutier Junior Sous Chef will oversee in the day-to-day operation of the Butchery department. Job duties include, but are not limited to: 

  • Cut, trim, bone and otherwise prepare custom and/or standard cuts of meat, poultry, fish and shellfish in accordance with Four Seasons Standards.  
  • Shape, lace and tie roasts and other meats, poultry or fish and may wrap or package fresh or frozen or prepared meats.  
  • Procure, cost and yield test all meat and seafood products 
  • Manage inventory, keep records of sales and determine amount, product line and freshness of products according to Four Seasons requirements. 
  • Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill. 
  • Train and supervise staff to ensure consistent quality and performance. 
  • Create schedules and manage the day-to-day operations of the butchery department. 
  • Maintain a clean and safe work environment. 
  • Create and maintain relationships with local farmers and suppliers to ensure a steady supply of high-quality meat. 
  • Work with the Café Boulud Executive Chef to develop and implement new products and dishes. 
  • Work harmoniously and professionally with co-workers and supervisors.  

What You Will Bring:

  • Excellent knowledge of and passion for local, organic, sustainable ingredients 
  • Strong culinary imagination, up to date on current and new culinary trends in the hospitality industry. 
  • 5+ years of experience in a in a fast-paced and luxury kitchen environment specializing in Butchery and/or Charcuterie 
  • 1+ years of kitchen management experience 
  • Able to work in a demanding environment and juggle multiple tasks and demands. 
  • Strong understanding of Budgeting/ Food costing measures to control costs 
  • Experience working in a Michelin recognized restaurant is an asset 
  • Skill at identifying and cultivating talent and passion within the team 
  • Strong communication skills in English, additional languages are an asset 
  • Strong computer skills and ability to use Microsoft Office Outlook, Word, and Excel
