Job Description

The Director of Food & Beverage (F&B) is a senior leadership role responsible for overseeing the entire food and beverage operation across all outlets, including restaurants, bars and in-room dining. This role ensures the highest levels of guest satisfaction, operational excellence, and financial performance. The Director leads and develops the F&B leadership team to deliver exceptional service, brand standards, and a strong team culture.
KEY RESPONSABILITIES
Develop and implement departmental strategies aligned with the hotel’s vision and goals
Foster a culture of excellence, innovation, and continuous improvement
Oversee daily operations of all F&B outlets, room service, and event catering
Be responsible for rostering and staff efficiencies
Ensure compliance with health and safety, licensing, and HACCP food safety standards
Conduct regular quality audits and customer service evaluations
Prepare and manage departmental budgets, forecasts, and monthly P&L reviews
Drive revenue through pricing, promotions, upselling, and menu engineering
Maintain high levels of guest satisfaction through consistent service and presentation
Handle and resolve guest feedback and complaints in a timely, professional manner
Oversee recruitment, onboarding, training, and performance reviews
Ensure compliance with industrial relations requirements under the Hospitality Industry (General) Award
